How do I store a ham?
If you're keeping it for a week or two, remove it from the wrapper, wipe it clean and store in a clean, dry, dark place and well out of reach of animals. Storage for more than a couple of months might be pushing it. Your house is not a bodega, we assume.
Once you start cutting it, it's best to store it on its ham holder, covered with a cloth. Most people keep some of the fat that you remove on your way to the meat, and use them to cover up the exposed meat.
How long does a ham last?
Once you start eating it, it will last about 4 weeks if it is kept in a cool, dark, dry place. It's best to cut from it regularly, to keep it from drying out. One good tip is to save the first big pieces of fat you cut from it, and use them to cover the exposed bits.
Does it need to be refrigerated?
Whole hams and shoulder hams should not be kept in the fridge. Off-the-bone hams and sliced ham are best kept in the refrigerator.
Is it hard to cut?
It takes a bit of practice to get those wafer-thin slices. We provide a friendly video tutorial on the website so you can get started right away. We also have a terrific illustrated book on the subject.
How long will it take to arrive?

Do I need a ham holder?
Yes. It's very hard to cut a whole ham or shoulder ham without one. A basic ham holder is fine for starting out. You can purchase basic and professional models in our Accessories section.
How much ham do I need?
Most large hams weigh between 7 and 7.5 kg. About half of this is tasty ham (the rest is skin, fat, and bone). If you are serving ham as a tapa or starter, 50g per person is a good rule (although people will eat a lot more if left to their own devices, good jamón is highly addictive). For a main course 100g is more appropriate.
A small ham, which comes from the front leg, usually weighs between 4 and 5 kg and contains slightly more fat than a whole ham - it's about 40% tasty ham by weight.
